Today Brighton put on the apron, it was cooking time! We made "Jenn West Cookies" for the Pinewood Derby. The cookies were made famous at Utah State by Jenn, who would bake hundreds of these chocolate/mint delicacies and hand deliver them to all her friends. They bring back fond memories of my "college days" every time I make them. They are so easy but taste very gourmet. You make a chocolate cookie and when it comes out of the oven you place an Andies Mint on top and let it melt.
Today as we were mixing and baking, Brighton wanted to add marshmallows and chocolate chips! We ran out of mints so it was a perfect time to try something new. In the oven the marshmallows got golden brown, just like you try to do over a camp fire! The cookies were delicious, a perfect combination of gooey chocolate and marshmallows! We are going to call them S'more Chocolate Cookies! Brighton says she wants to sell them when she gets older...watch out Mrs. Fields!

Yum, I like the marshmallow choco chip idea a lot! Brighton looks so grown up and beautiful.
